...when the AC's blowing cold, with your humidity there ought to be a least intermittent drips from the condensor drain tube dumping condensed water. Check it out when the AC's blowing cold to see how much it drips, and then when it gets hot, see if the tube is still dripping. If it's not dripping at all then it might be that the condenser is freezing up. Also, when it starts blowing hot, stopping the compressor by shutting off the AC button will allow the condensor to warm up, melting the ice. If condensor freeze-up is the problem, the tube will start to drip as the condensor thaws (AC button off.)

Expansion valve problems are probably the most elusive. If your AC is inconsistent, then I would almost bet on your expansion valve being the culprit. Either the valve is bad or you have moisture in the system that is freezing when going through the valve. The latter would most likely happen shortly after turning the air on, so you might have cold air for a minute and then lose cooling ability.

You may have mositure in the system, especially since you said not much work has ever been done to the AC. Your freon charge may be OK but moisture will ice the system up once it starts working hard. So step one should be to take the car to a shop that can remove and save your freon and then have them hook your system up to a vacume and draw the system down for an extended time to remove every last bit of moisture in the system. Go to an auto parts store and buy a new dryer for 15.00 and have that installed prior to drawing the system down. Have them reinstall your freon and see what happens.
